I have read that at least one person was using puppy linux and I assume there might be other with a preferred distro that doesn't have a driver for the touch screen. You could of course set it up at a desk and use a mouse, keyboard , or a mouse to operate a virtual keyboard but then you lack portability. The trick is to make these versions of linux portable. I suppose you could use one of the various finger mouses. Whether  it's a portable track ball, optical finger mouse, etc. I would suggest using a pen mouse and a virtual keyboard. you could use the screen as a mouse pad. It would be fairly close to the touch screen. One that I was looking at for use with the Dt is:
